Chef, Culinary Innovation Center

Blue Rock search is partnered with Subway to identify their next Culinary Innovation Center Chef.  This highly crucial role will manage inventory levels, production, equipment, and cleanliness of Innovation Center.   Working with the Innovation Managers on product innovation and testing. Innovate and test products based upon the needs of Subway, ensuring proper documentation of results is captured and properly reported.

Essential Functions:

  • Daily setup and preparation of product for the Innovation Center to include bread baking, meat slicing and vegetable preparation
  • Maintain Innovation Center equipment to a “show case” standard
  • Operations expert and liaison between the Operations and Innovation teams
  • Execute and document all testing of new and existing products or procedures and document recipes and formulations of new and existing products and procedures
  • Prepare products and support R&D/QA team members in product evaluations

Additional Functions – Important responsibilities but not essential to the position.

  • Ability to work in-store as needed to stay in tune with operations procedures
  • Demonstrates basic proficiency in the areas of planning, development, and execution of all the core services of culinary such as recipe development, package directions, performance and yield testing
  • Maintain R&D Calendar to document Innovation Center activities.  Coordinate scheduled events with cross-functional teams to ensure proper utilization of physical assets
  • Provide culinary and test kitchen support for special events and functions
  • Provide culinary and test kitchen support for cross functional project work
  • Travel as needed to supplier production runs, franchisee training, photo shoots and supplier ideations

The successful candidate will have:

  • 5+ years of experience in the culinary field
  • Experience managing kitchens and day to day operations
  • Bachelor’s Degree Culinary, Operations, preferred
  • Certification Serve Safe, preferred
  • Ability to work independently and collaboratively in a team-based approach to innovation
  • Ability to customize recipe creative based on team input, development briefs, consumer insights and operations input
  • Ability to manage multiple projects simultaneously and to deliver on time
  • Great organizational, written, and verbal communication skills
  • Demonstrates a strong passion for Culinary Innovation
  • Adapts easily to changing business needs and environments
  • Curious & Enthusiastic with high energy
